Sweet Potato Breakfast Bowl
Today’s recipe is a very simple, delicious and nutritious breakfast.
Ingredients: (serves 2)
1 medium to large size sweet potato
peppers and onions you prefer
4 large eggs
Tsp. olive oil
Directions :
Chop sweet potato into small pieces and saute with olive oil on med to high heat. (covering with a lip cooks quicker)
As soon as the potatoes are close to being done, add your chopped peppers and onions.
Place in a bowl, fry your eggs and then place eggs on top.
